珍味鱿鱼调味鱼干片制作技术
　　工艺流程　　原料验收→原料处理→干燥→调味浸渍→干燥→烙烤→拉松→称量小包装→封口→包装　　操作要点　　1)原料及原料处理。选用体长10-15厘米的新鲜鱿鱼。原料经冲洗后剖开腹腔，除去头部，内脏、墨囊、软骨、肉鳍，剥表皮，制成鱿鱼肉片。　　2)第一次干燥。将鱿鱼片洗净沥水后置于竹帘上翻晒至6-7成干。　　3)调味料?渍。将第一次干燥的鱿鱼肉片放人调味液浸渍1-1.5小时，温度要低于20℃。　　4)第二次干燥。将浸渍后的鱿鱼片沥水，排列在竹帘上第二次晒，晒的过程中要翻晒，晒至7-8成千即可焙烤。　　5)焙烤。用输送式红外线烘烤炉烘烤，温度180℃-200℃，时间1-2分钟。　　6)拉松。将烤好的鱿鱼片趁热插入拉松机两辊轮间隙辊压拉松。--博才网
