鲥鱼多少钱一斤？
鲥鱼为溯河产卵的洄游性鱼类，因每年定时初夏时候入江其他时间不出现而得名，分布中国南海及东海，亦见于长江、珠江、钱塘江等流域的中、下游，市场价格非常昂贵，一般养殖鲥鱼的市场价格大约150～300元一斤，长江野生鲥鱼的市场价格高达元一斤，但从八十年代以后野生鲥鱼已经绝迹。
鲥鱼的选购方法
新鲜的鲥鱼外形光亮，鱼鳞白亮如雪，鱼鳃红色鲜艳，鱼体较肥，体重1.5斤以上较佳，通常鱼体越大口味越佳，鱼体越肥口味越香，肥壮的鲥鱼体宽肉厚。但事实上，近几十年来基本上见不到新鲜鲥鱼的影子，加上鲥鱼格外娇弱，出水即死，因而就更难一见了。
鲥鱼的食用方法
1、红烧鲥鱼
【材料】鲥鱼，冬笋，香菇，盐，味精，白糖，酱油，料酒，花生油，香油，葱，姜，蒜，淀粉，花椒。
【做法】①鲥鱼处理干净。②爆香葱、姜、蒜，加鱼煎一下，烹入料酒，加配料、汤调味。③慢火烧透入味，用湿淀粉勾芡，加香油即可。
2、清蒸鲥鱼
【材料】鲥鱼，鸡油，葱，姜，盐，料酒。
【做法】①鲥鱼清洗干净，姜切片，葱切段。②鱼放盘子里加料酒、盐、葱姜、鸡油腌20分钟。③蒸锅烧开放入鱼蒸15分钟，拣去葱段即可。
3、香煎鲥鱼
【材料】鲥鱼，大葱，麻油，浓酱油，料酒，白糖少许。
【做法】①将麻油涂匀煎锅，将鲥鱼和大葱放入平底锅。②将煎熟的大葱夹开，加上料酒等调味品和水焖煮。③一会儿后之前夹起的大葱，让大葱充分吸收酱汁。
